It’s not just our products that require precision when it comes to the perfect blend. Starting with the Faulkner family duo and bolstered by a team of Central Coast locals – who’s friendships span a total of four decades -The Onyx team all bring their own unique skills, flavours and personalities to the bar…


The Team


Founder and Sales Director

Mitch Faulkner was born to bring the best coffee flavours to the masses. With over ten years in the coffee industry and becoming 2x Australian Coffee Cocktail Champion, Mitch has been a leading advocate for Australia’s coffee revolution. Culminating in the creation of Onyx’s original award winning product – Onyx Coffee Liqueur.

Mitch is a champion for the Central Coast and although he’s had offers to work in Sydney, Melbourne and in major cities around the world, he’s remained true to taking Onyx forward from where it all began.


Cofounder and Director

Keeping it in the blood, Matt is the other half of the founding Faulkner duo. Along with being the original bulk producer of the cold brew that took Onyx to scale, Matt brings the business know-how to the team. His previous experience in businesses development and systems design has been a driving force behind Onyx’s continued successes.

Matt was also a rockstar in his previous life, touring with the band Decorated Generals.


Head Distiller

The spirit connoisseur with the tats and moustache to match, Pete boasts being one of Australia’s youngest professional distillers. Leading the charge in the Onyx lab, his passion for innovation leads many Onyx product decisions as well as many a lairy coffee cocktail recipes.

Pete, also runs and owns Bar Toto on the Central Coast. The first port of call when new Onyx products are ready for the public’s taste buds.


Head Coffee Brewer & Production Manager

Bringing almost a decade of coffee roasting experience to the table, Scaysey has the palate and dedication to recognise the difference between a great coffee flavour and the exceptional coffee flavour that Onyx produces.

A wanderer who’s found a home in the Onyx ranks, he’s never without an interesting theory to share over a morning coffee or evening cocktail.


Founding Father and Roast Director

With over 33 years of coffee experience under his belt, Ini brings an understanding of coffee production that is second to none. Being responsible for establishing and building a coffee empire spanning the globe, including establishing Danes and Michel’s Espresso, he has a true sixth sense for producing A-grade coffee products.

If we’re not working hard in the lab, we’ve probably all gone fishing.


The History

As the world catches up to the trend of cold brewing coffee to extract the best favours from the beans. We have been plying our trade for almost a decade, beginning with an opportunity to create Australia’s first coffee Liqueur. And what a beginning it was…


Liqueur 01

Our foray into the spirit world was ignited when Mitch and Ini were approached to produce a coffee liqueur. Loving a challenge, they set out to not only create one, but to show the competition they meant business. That original liqueur went on to win the first Gold Medal by an Australian distiller at the critically acclaimed International Wine and Spirit Awards.

Cold Brew 02

With the liqueur selling by the droves out of a private label distillery in the Hunter Valley. We didn’t realise we had the perfect Cold Brew base product until we needed an option for utilising the excess from our liqueur batching.

Having a keen eye for an opportunity, we started mixing up Espresso Martinis with the brew which lead to the aptly named - Onyx Coffee Pure - being sold as the preferred alternative to batching espresso in bars.

When Matt joined the party, we were able to bring the level of production up to commercial level sales, catching the eye of the Merivale Group in the process. With this partnership in place, we had officially created the blueprint for commercial brewing of cold brew and had raised the bar for consistent product delivery.

Innovation 03

With the introduction of Pete and Scaysey to the fold and the cold brew and liqueur under the belt, the Onyx coffee lab started pulsing. First with a coffee vodka. Next, a ready to drink espresso martini jar, Then the world’s first shelf-stable cold brew. Before finally our latest triumph; an ever-evolving espresso martini nitro keg system.

Not only are our Onyx products continually winning awards, but they continue to do so across a broad range of events and categories. A testament to our dedication to quality.

We are continuing to build on our repertoire of products, striving to ensure we provide our customers with not only the best coffee spirit products on the market, but the technical know-how to deliver the tools and education to everyone involved. This includes making sure our distributors, our bartenders, our customers and their customers get the very best coffee spirits products in Australia.

By leading the coffee cocktail revolution, pushing innovation and having a bit of fun at the same time, we’re dedicated to delivering the best coffee spirits products to Australia and beyond.

We also have – and always will – support Huntington’s NSW. The work they do is integral to helping find a cure for the disease.

The Lab

Create, innovate, graft & craft. These are the guidelines we follow when we throw on the white coat and goggles in the lab. Some of our best times are spent mixing and matching our Coffee flavours with our home-grown spirits to create our flagship flavours. Take a sneak peak at the process below…

Bean Selection

Our Onyx blend is a combination of smooth low-acid coffees from South America and refined fruity, full-bodied East African coffees. To round it out we use a mix of beans from Asia that include a unique honey-process.

The Split:
Out of Brazil: Bold chocolate and sweet caramel praline notes.
From Ethiopia: The natural method Djimma contributes a uniquely fermented fruity character.
And India: Our washed coffee binds the blend together with a rich cocoa aftertaste and supremely powerful body.

Onyx coffee is full-bodied, low in acid and as smooth as silk, with a rich finish.

The Roast

We use Espressology Custom Roasters or all of our specialty roasting needs . Having Espressology’s head honcho Ini as an integral part of the Onyx team allows us to ensure we hit international benchmark specifications; with our attention to detail second to none.

We’re proud to say our coffee is roasted to perfection – farm to cup.

The Grind

Our uniform and gentle grinding delivers a consistent particle size.

Our measured cooling fan ensures our coffee is ground under minimal heat while under peak demand. This allows us to grind a lot of coffee beans in a short amount of time, whilst preserving the optimal flavour from the bean.


Our cold brew is produced using a world-leading cold water extraction process, whereby the specialty coffee oils retain their natural smooth, sweet and full-bodied character.

Unlike hot water extraction (like espresso), our cold brewing process leaves behind unwanted bitter oils and fatty acids. This results in a consistently perfect, smooth, 100% pure coffee.

Final Touch

Equal time and effort has been spent on our production facility and our processes. Every single aspect is highly controlled and we use a new-wave filtering technique that gives our cold brew a pristine clarity, without removing the flavours.

We then store in an oxygen free and temperature controlled environment to lock in our bold, trademark Onyx flavour.


The Still

Our Portuguese copper pot still is the pride and joy of the Onyx Lab. The pedigree of the creators (Copper Alembic) is such that they have been building copper products for over 180 years and we’re glad we get to reap the benefits.

This imported treasure endured 1.5 million hammer hits to ensure it was shaped to perfection, before it made it’s way across the seas to bring you the Onyx Spirits we all know and love.


We keep it plain and simple to get the best base spirit.

Made from pure Australian wheat ingredients and coupled with our Onyx designed H2O. These two base ingredients make up the start of the Onyx process.


Over three years of consistent research and development have taught us how to ensure our controls are set correctly. We have always maintained that our products are free of preservatives, even if it takes us months longer to nail the magic mix.

Each batch of spirit is tested twice in the lab to make sure that our quality remains A-grade and the most consistent on the market.


The extraction of the good stuff – Distillation separates compounds and is based on hitting the correct boiling points or volatility values of each component. The Ethanol is the first to go, as it boils off, vaporises and is then captured and re-condensed into liquid, which reels off at 90%

With a variety of techniques and spending a lot of time measuring, we have a unique Onyx distillation process that we are proud to call our own.

The Blend

Our end spirit products are blended in specialist vats using our cold brew coffee, vodka, sugar and again our own water. Each batch is rested to allow the flavours to wholly combine before we draw samples that go into our lab for further testing.

Thursdays are our favourite day at Onyx as this is when we taste test the latest products. Always striving to innovate and deliver cutting edge coffee spirits products to our customers.
